Garlic Scape Pesto

This recipe couldn't be easier or more delicious. It is great for early summer when fresh garlic isn't ready yet but you need to get a pesto fix in quick!

5-6 garlic scapes

1 cup basil leaves

½ cup pine nuts

1/3 cup olive oil

2/3 cup Parmesan cheese

salt and pepper to taste

1. Combine all ingredients in a food processor and blend to a thick paste.

2. Cover with 1 tablespoon olive oil.

3. Enjoy!
